In this hands-on class you’ll learn to plan, shop, prepare, and enjoy quick, healthy, and delicious meals made from whole foods.  We’ll talk about the benefits of choosing seasonal and local foods as well as our regional limitations so you have solid format for maximizing nutritional intake with minimal impact.  We will provide variations on each meal so that everyone can meet their particular dietary needs or restrictions (vegan, vegetarian, omnivore, gluten-free, etc).

We’ll also discuss the importance of, and different ways to maintain mindfulness and enjoyment during the entire process.  Additionally, we will share practical health principles from a Western Nutritional and Classical Chinese Medicine perspectives.  You will come away with a better understanding of how and what to eat to rebuild your health, harmonize your constitution and attend to your personal preferences or restrictions.

* 12/10 Medicinal Stocks & Hearty Soups: Chicken Stock, Chinese Tonic Herbs Roasted Root and Squash Soup
* 12/17 Sweet Treats for the Holidays: Pumpkin Pie, Apple Pear Crisp & Avoiding the Foods You Don’t Want

INSTRUCTORS:  
Kyler Grandkoski has worked for several years as a professional chef before transitioning into full time gardener/farmer.  He has studied health, nutrition and herbalism from both an Eastern and Western perspective.  He is passionate about eating simple, delicious, responsibly grown or gathered food that truly nourishes the self.  He will lead the 11/19, 12/10, & 12/19 classes.

Ashley Brown is just months away from receiving her Masters Degree in Classical Chinese Medicine from the National College of Natural Medicine.  She is an enthusiastic baker and cook as well as master herbalist and body worker.  Her passion is helping people find health through Chinese dietetics, constitutional considerations and seasonal adaptations.  She will co-teach the 11/19, 12/10, & 12/19 classes.

Jonathan Burger will be teaching the 12/3 class on Fermenting a Hearty Breakfast: Sourdough Pancakes, Breakfast Porridge & Sauerkraut.  Johnny has been studying herbology, permaculture, gardening & fermentation with a variety of local master teachers for several years.
